Caramel Dream Tassies
Cream Cheese dough for 4 dozen tassies
14 oz. pkg. caramels (unwrapped)
3/4 cup evaporated milk, divided
1/2 cup butter (1 stick)
1/2 cup shortening
2/3 cup sugar
1 tsp. vanilla
ground nuts
Melt caramels with 1/2 c. milk in microwave or double boiler. Spoon into baked Tassie shells, about 2/3 full.In a small bowl, blend butter and shortening, mixing well. Set aside for 20 minutes. In another bowl, blend sugar, remaining 1/4 c. milk, and vanilla. Set aside for 20 minutes.Combine the two bowls into a large bowl. Using a mixer, whip on high until cream. Next, spoon this frosting on top of the caramel layer, and then sprinkle with ground nuts. Makes 4 dozen cookies.
Note: It is best to use miniature cupcake papers in pans

Lemon Curd Tassies
Cream Cheese Dough for 2 dozen tassies
1/2 tsp. lemon zest
3 eggs, well beaten
1 1/4 c. sugar
1/3 c. lemon juice
1/4 c. butter
Fill 2 tassie pans with dough. Bake tart shells at 400F for 10 to 12 minutes. Cool in pans.To Make Filling: In saucepan combine eggs, sugar, lemon juice and butter. Cook and stir over low heat till thick, about 15 minutes.Remove from heat; stir in lemon peel. Chill. Spoon a rounded tsp. of filling into each shell. If desired, you can top with toasted slivered almonds. Chill.

Chocolate Pecan Tassies Filling: for 24 Tassies
1 tablespoon butter or margarine
1 square (1 ounce) unsweetened chocolate
3/4 cup packed brown sugar
1 teaspoon vanilla
1 egg, beaten
Dash salt
3/4 cup chopped pecans.
Melt butter and chocolate in saucepan over low heat. Remove from heat. Blend in sugar, vanilla, egg and salt; beat until thick. Stir in pecans. Spoon about 1 teaspoon filling into each unbaked pastry shell. Bake at 350° F. for 20 to 25 minutes or until lightly browned and filling is set.Cool in pans on wire racks. Remove from pans; store in airtight containers.

To the Old Biddies who are amazed when I do my job:

ladies (read: old bitches), im a freaking receptionist. im not given a lot to do, but im pretty sure i was hired because i wasnt gonna struggle my way through these tasks. so settle the fuck down about how fast i type or how im soooo good at helping you proofread. oh my god, isnt it unbelievable that i can tell when a word is spelled wrong or when something is in a different font or is italicized for no reason? i surprisingly enough dont think its an amazing feat. i dont put it on my resume or anything. so stop freaking complimenting me on my ability to see. it makes me feel like im working for retards... then again, maybe i am.
also, ive had enough of your fake nice comments that are actually a jab at my ability to do things. do you really think that after like 10 months of working here i wouldnt have learned how to save things to the document manager thingy? just because i saved something to my desktop so that i could work on it later does not mean that you need to teach me how to save it so everyone can access it. and when you stand like 5 feet down the hall and whisper when nobody but me is in earshot, i know youre talking about me. i know how much you gossip. if you really need to talk behind my back, go to the other end of the office. unlike me, you dont have to get permission to go someplace else.
and for god's sake, STOP REDOING INVENTORY. i check to see that we have everything like once a week. just because you cant find something does not mean it has to be ordered. look a little harder once in a while... open a drawer or look behind the half full box that you seem to think is almost empty. if we are almost out of something, then just tell me that. dont be all weird and give me a 3 minute speech about how you dont know if i checked in a while but we seem to be almost out of something or other. you seem to think that getting down to one unopened pack means i have to run out to the office supply store asap to pick up more stuff. settle the fuck down. we were no where near out of those things until you used like 25 of them on one freaking project. i really dont think that in the next day we're gonna use the rest of them.
i'll be nice to you and listen to your stupid little small talk... i'll smile and laugh at your jokes. but if you keep treating me like a child, i will seriously consider smacking you across the mouth.
just let me do my freaking job.

Wicked

Hiya Girlies :)

On Mon, Tue and Wed I went to NYC to work at our office there. I like going there a lot. It's easier to work face to face with my coworkers rather than over the phone, I really like being in NYC - it's so interesting - so much to see, and the food is always crazy awesome, no matter where you go. My favorite place to go there is Jamba Juice which is funny because it's just a chain, not something specific to NYC. If you've never heard of it, it's a smoothie place and it's freakin yummy (I love smoothies). A coworker, who also loves Jamba smoothies, and I always plan "Jamba days" when I come out to work in that office. This time we went twice - I got a "banana berry" and a "carribean passion" - mmmm so good.

I have been wanting to see a broadway musical for a while now and a newish coworker of mine is theatre-crazed so I planned to see one with her on Tuesday night. We saw "Wicked" and it was awesome. I want to go see it again and again :) If you want to read about it:

Friday Randomness

It's Friday again. Not sure exactly what topic to write about so I'll just write a bunch of random crap :)

- Love the new blog colors and pic Chels! I already said that but felt like repeating it.

- It's so cold :( 13 degrees right now; it was only 2 this morning; it was in the negatives last night. bleh.

- It was so cold last night, the cold air coming in thru the vent of our hot water heater froze the pipes. This morning I got up, stumbled to the shower, turned it on, and only a dribble of water came out. Great. We fixed it by heating up the frozen pipes for a few mins with a hair dryer but it was too late to shower so now im sitting at work dirty. ick.

- I'm on a conference call right now that I have every day at 11am. Today it was postponed.

- On Monday I'm going to NYC to work in that office for three days. I'm looking forward to it and dreading it at the same time.

- My curiosity got the best of me and I recently found a pic of Eric holding a very young child. I'm shallow... and heart-broken. I bet he is a great father.

- Last Saturday Chels came over and helped me go through boxes and undecorate the xmas tree. Thanks! :) I think I need some more bath stuff...

- Last Sunday I spent all damn day going through even MORE boxes (including another box of bath stuff), throwing old crap away, and organizing. The house looks much less cluttered now and I didn't even bring anything down into the basement yet.

- After I was done on Sunday I found ANOTHER full box of bath stuff! I didn't have the energy to do that one too, so it's sitting in my livingroom. What the heck is(was?) wrong with me? haha

- I think we are all getting together tonight for dinner/hangin out (directed at Chels but hey Sarah, if you want to come, that would be awesome! ;)).

- We should really see about getting the tank stand over to your apt. I need to remember to measure tonight to see if it would fit in the Envoy. It will be so nice when it's finally all set up.

- I've been blog-surfing a lot lately. I found an old blog of a L&D nurse who would write about the crazy things she experienced. I have to remember to post a funny one I read yesterday.

- Way back when this blog was new, I kept saying I was going to post the Applesauce Pie recipe but I never did. I suck. I will post it. I will.

Can't think of anything else right now which is good 'cause I need to do some work (my conference call is finally over). Sarah! Post and tell us what is going on with you! Is the laptop behaving so far?

Aquarium going to some sort of use...

so we have the tank part of the aquarium in the dining room currently. still no stand so we havent put water or turtles in it yet.
but let me tell you, the cats freaking love it. when im home, i keep hearing them both jump into it... or one of them jump into it to get away from the other. when im cooking dinner, roland gets up on the ledge so he can see up onto the counter at me. they even like playing in the basket of rocks that is stowed under the current tank. i caught one of them inside a tupperware container that was balanced on top of it too.

god knows i should keep them away from it... im gonna have to thoroughly clean out the cat hair before i turtlize it. but, for a little bit, it does stop them from knocking over the cat pirate ship and then meowing at me until we set it back upright.

anyway... things are normal for me. same old, same old. my nose is currently all stuffy and i was told my face was flushed, but i dont know if that has to do with allergies and the shitty carpet at work or because the 10 degree weather is actually making me sick. i'll have to start taking vitamin c tablets again just in case...

Doritos, Coffee Ice Cream and a Large Spider

I'm craving Doritos and coffee ice cream. I have been since last night. I almost went to the store then to get one or both of them but Rich didn't want to so I didn't go. Why do I want these things? I haven't had either in a really long time. I usually prefer chocolate-type ice cream too. what the eff? MmmmMmm maybe mud pie ice cream...

Anyway, that last post from Chels reminded me of a memory I have from when we lived in Chesterfield. I was around 11 and I had my own room. I think you two shared a room... though Chels was 2 or under when we lived there and I don't remember a crib. I dunno. Anyway, my room was basically just my waterbed. The bed filled up so much of the room you could only just walk in there and then you'd have to get on the bed. It was funny. However, that doesn't really have anything to do with my story :)

One night I woke up to very light tickling on my arm. Either my arm or the back of my hand. I was only half awake though so I kept trying to move my hair because I was sure that was what I was feeling. After a short time of this, and it not working, I began to wake up more and realized it was not my hair I was feeling. I finally freaked out, sat up in bed and flung my arm out instinctively. A second after I flung my arm I heard a soft THUD against the wall of my room. I could only imagine the size of the spider or whatever the heck it was that was crawling over me while I slept. bleh! I jumped out of bed (as well as you can "jump" up from a waterbed) and started searching frantically on the floor and table in the direction I heard it hit. I must have searched for a half hour. I never found anything. I guess I'll never know what actually happened or what it was but I'll always remember it!

Awesome night

i woke up some time in the night... probably 3ish? roland was laying in the crook of my knee and started making hacking noises. in a panic i threw up the blankets and that either scared him off the bed or flung him... im not sure. i got up quick and thoroughly patted down the sheets to make sure he didnt puke on my bed. he stopped making noises as far as i could tell. so i turned on the light and saw him hunched over my shoe, squinting up at me.
apparently i had got him off my bed to have him puke in my shoe. it was mainly un-chewed food so i got most of it with a tissue and then spot cleaned the inside of the shoe, because they are kinda quilted with a sewn in insole or something. i then closed him out of the room. i love him but i theres nothing i can do for a pukey cat, especially one that either lays in bed or under it.

but still. poor little boy... had to puke in a shoe.

BattleStar issues

Dear Jilly Bean and Panther,

HAPPY NEW YEAR!

Ok, now we have that taken care of, how are you guys enjoying a day off? Last night was Natalie's birthday, so I was designated driver so she could party with her friends. I mean, I went too, but I was not drunk wearing funny hats and dancing. Like everyone else.

So I Woke up today and decided that I would ring in the first day of 2009 geeking out watching Battlestar Galactica. And then I discovered that I don't have the first disc. My set has two copies of season 3 disc 1 and zero copies of season 1 disc 1. It was a sad story. The missing disc only contains the miniseries.

So the question is: did you purchase it from somewhere who would replace the disc? Would I need to ship the whole thing up to you, or just the one disc? I can just buy a separate copy of the miniseries for about $10. So if that's a better deal than I will just replace the disc.

SO basically, I can replace the disc myself, but if you can get the people who sold it to you to replace it for free (or less than $10), then let's do that.

Otherwise quiet around here. Natalie redecorated my room while i was gone and it looks awesome! I will try to post pictures eventually. I will also post the apple pie recipe.

HAPPY NEW YEAR!!

this is like the dumbest holiday ever... next to like flag day. great a new year... lets close a bunch of stores because everyones probably too cold and hung over to leave the house. i am glad i dont have to work today though. got to catch up on my sleep.

justin and i stayed up til about 12:05 and then went to sleep. the cats were too busy playing with the kitty pirate ship to come to bed that early though.

nothing else new here really. i still hate winter. our key finally works in the mail room again. it's not the key that has been working all year though. i went to the office and they gave me some other key. :: shrug :: it works now so thats all that matters.
